Tasty Recipes to Welcome Summer

Chicken Kebabs with Creamy Pesto
Serves 4
20 minutes total time

Ingredients
2 teaspoons grated lemon rind
4 teaspoons fresh lemon juice, divided
2 teaspoons bottled minced garlic
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
8 (1-inch) pieces yellow bell pepper
8 cherry tomatoes
1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
1 small red onion, cut into 8 wedges
Cooking spray
2 tablespoons plain low-fat yogurt
2 tablespoons reduced-fat sour cream
1 tablespoon commercial pesto

Instructions
Preheat broiler. Combine rind, 1 tablespoon juice, garlic, oil, salt, and pepper. Toss this dressing with bell pepper, tomatoes, chicken, and onion. Thread vegetables and chicken onto 4 (12-inch) skewers then place on a broiler pan coated with cooking spray. Broil 12 minutes or until chicken is done, turning occasionally. Zucchini and Sausage Pizza
Serves 4
20 minutes total time, 5 minutes prep time

Ingredients
3 ounces ground mild Italian turkey sausage
1 cup thinly sliced zucchini
1/4 cup refrigerated basil pesto, divided
1 (12-oz.) pkg. of 3 (7-inch) prebaked pizza crusts
3 ounces fresh mozzarella cheese, very thinly sliced
1/8 teaspoon crushed red pepper
2 tablespoons fresh basil leaves

Instructions
Preheat oven to 450°F. In a small nonstick skillet over medium-high heat, cook sausage until browned through then transfer to a plate. Add zucchini and 1 tablespoon pesto to the skillet; cook, stirring often, about 3 minutes then remove from heat. Place pizza crusts on a baking sheet and spread remaining 3 tablespoons pesto evenly over crusts. Top evenly with zucchini, sausage, mozzarella, and red pepper. Bake at 450°F until crusts are crisped on edges and cheese is melted, 7 to 8 minutes. Remove from oven and sprinkle with basil. Get the full recipe here.

Watermelon Salad
Serves 6

Ingredients
1 baby watermelon (about 3 lb.)
1/2 cup fresh mint
1/4 cup red onion, thinly sliced
12 oz. cherry or grape tomatoes, halved
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 teaspoon pure honey
Kosher salt and black pepper
Crumbled feta

Instructions
Cut watermelon into 1 1/2-inch-thick triangles and arrange on a platter. Top with fresh mint, red onion, cherry or grape tomatoes. Combine olive oil, fresh lime juice, pure honey, and kosher salt and black pepper in a bowl and spoon over other ingredients. Top with crumbled feta.
